This is a savory cocktail that graces the winter menu at HIDE in the Deep Ellum entertainment district in Dallas. It includes chicken stock just like mother’s chicken soup, so it might just do the trick this flu season!
2 oz Ford’s gin
3/4 oz fresh chicken stock
1/2 oz clarified lemon juice
3/8 oz simple syrup
4 drops 20% saline solution
2 small sprigs of fresh Thyme
Combine all ingredients in a shaker tin with ice and shake hard. Double strain into a chilled coupe and garnish with two small sprigs of fresh thyme.
The cocktail is light and herbaceous. The aroma of fresh thyme hovers softly over the palate as a briny acidity makes itself known soon after the first sip.
