Summertime fruit and smoothie recipe! #HotelTacoma

With a successful Memorial Day weekend behind us, the unofficial kick-off to summer has definitely arrived, which means it's the perfect time of the year to eat lots of fruit and sip on lots of yummy smoothies!

Elena Hight, Team Toyota Athletic, and an American Olympic snowboarder who recently spent the weekend at #HotelTacoma, would like to share her favorite smoothie recipe with all of our readers to enjoy whether you are busy soaking up the sun at the beach or participating in an active hiking outdoor adventure. No matter which type of activity you choose to do this summer, make sure you have fun and stay healthy with some fresh fruit and a refreshing smoothie like the one we have below.

Pineapple Refresh

  • 1 cup chopped pineapple
  • 1/2 banana
  • 1/2 cup coconut water
  • Juice of 1 lime
  • 3 - 4 sprigs mint
  • 3 - 4 sprigs basil
  • 2 teaspoons agave
Preparation: One night before, chop pineapple and banana and freeze. Add all ingredients to blender and blend until smooth. Note...if you do not freeze the fruit in advance, just add ice cubes to fresh fruit in the blender for a similar consistency.

This recipe is courtesy of Elena Hight, a Team Toyota Athlete, and an American Olympic snowboarder. Hight is a two-time Olympian, four-time medalist at the Winter X Games and was the 2012 U.S. Open Champion and recently spent a weekend at Hotel Tacoma in the Hualapai Mountains of Arizona.
