Easy Recipes to Kick Off Football's Biggest Game

The avocado is a very unique fruit and surprisingly, has many nutritional benefits and is used in a variety of dishes due to the awesome flavor and rich texture. Avocados are very high in potassium, even higher than bananas, and studies have shown that a high potassium intake is linked to reduced blood pressure. 

As you may have heard, avocados are very high in fat and is actually one of the fattiest plant foods available. With that being said, this type of fat is a the "heart-healthy" fat and is beneficial in products like olive oil, and both types of oil, avocado and olive are a great alternative for cooking. Over all, avocado consumers have been found to be much healthier than people who don't eat them. So eat up, let's ante up those 2016 numbers and make this amazing Artichoke Guacamole with Toasted Pine Nuts for the Big Game! With these easy-to-make recipes, you'll be sure to score a touchdown in the entertaining zone with your friends and family. Enjoy!

Sauza-Rita (Serves 8)
Preparation: Pour limeade and beer into a pitcher filled with ice. Fill limeade can with Sauza Silver Tequila and pour into the pitcher. Finally add a can of water, stir and serve!

Artichoke Guacamole with Toasted Pine Nuts (Serves 4)
  • 2 tbsp. finely chopped cilantro leaves
  • 2 tsp. finely chopped white onions
  • 2 tsp. minced jalapeno or Serrano chilis (Optional: remove seeds and membranes)
  • 1/2 tsp. Kosher salt
  • 2 large ripe avocados, peeled and seeded
  • 1 small plum tomato, cored, seeded and finely chopped
  • 2 tsp. freshly squeezed lime juice
  • 1 cup marinated artichoke hearts, chopped
  • 1/2 cup toasted pine nuts
Preparation: In a medium size bowl, use the back of a spoon to mash 1 tablespoon of cilantro, 1 teaspoon onion, 1 teaspoon of minced chili, and 1/2 teaspoon salt together against the bottom of the bowl.

Add the avocados and gently mash them with a fork until chunky-smooth. Add 1 cup of marinated artichoke hearts chopped with 1/4 cup of toasted pine nuts and stir. Fold the remaining cilantro, onions and chili into the mixture, stir in tomatoes and lime juice and taste to adjust the seasoning. Serve with warm tortilla chips.
