Make an Ice Chest Worthy Lunch for Your Next Trip to Schlitterbahn! #BahnCooler @usfg

Summer is in full swing and it's the perfect time to take the family on a summer road trip. One of my family's favorite destinations is Schlitterbahn. The kiddos love being able to slash and play in the water all day and Mom loves the fact that we can bring our own food and drinks into the park and avoid costly meals that can add up to quite a bit for a family of four or more.

Schlitterbahn is the ultimate family playground and the proof is in the ice chest! This family-friendly park combines FREE parking with the option to save money by bringing an ice chest filled with goodies. That's awesome! Below is a recipe that I will definitely include in our next family trip to Schlitterbahn...super easy to make, yummy and good for us. In addition, it keeps very well in an ice chest

Chicken Guacamole Salad Sandwich
  • Chicken ( I used 2 large cans of chicken chunks but left over chicken would be great!)
  • 2 avocados
  • tomato (diced)
  • Salt
  • Pepper
  • Various seasoning (to your particular taste)
  • Bread
Preparation: Cut avocados in half and take out the seed. Scoop the avocado into a bowl and mash with a fork or potato masher.  Mix the chicken and avocado together until completely combined. Add salt, pepper and any other seasoning that sounds good! Apply your chicken and avocado mixture to your bread...add a few pickles or chips and enjoy!

Not only does this save money for my family, but it solves the problem that I have with picky eaters. I can pack my kids favorite food and drinks so that they can maintain their energy to have fun all day long. We can spend more time enjoying the amazing rides rather than standing in line for food and drink. Plus I love the idea that I don't need to bring a lot of cash into the park and risk losing it, because our food is already available whenever we want it. 

Schlitterbahn has the most awesome and fun-filled rides ~ some wild and some mild, but something for everyone and of course, plenty of room to set up our family picnic!
